White Chicken Chili




Ingredients:
1 medium onion, chopped
1 tablespoon olive oil
2 cloves garlic, minced
4 boneless skinless chicken breast halves (4 ounces each), chopped
2 cans (14 ounces each) chicken broth
1 can (4 ounces) chopped green chilies

2 teaspoons ground cumin
2 teaspoons dried oregano
1-1 1/2 teaspoons cayenne pepper
3 cans (14 1/2 ounces each) great northern beans, drained, divided
1 cup (4 ounces) shredded monterey jack cheese
chopped jalapeno pepper (optional)

Chicken Tortilla Soup

I got this recipe from my aunt one day when she mentioned it on facebook.  It is AMAZING.  mmmmm.  I sometimes double the recipe if I want left overs, or there's a lot of us.  However this recipe was enough for me, my dad, and my brother to all have plenty for dinner.


Ingredients:
6 c. chicken broth (I make my own using bullion cubes, much cheaper than the prepackaged stuff!)
1 14.5oz can crushed tomatoes, undrained
2 Tbs. vegetable oil
2 large chicken breasts
1 yellow onion, chopped
2 cloves garlic, finely chopped
2 jalapenos, minced (sometimes I use 3-4 depending on the size)
1/2 tsp. cumin
1/2 c. shredded jack cheese
chopped fresh cilantro
1-2 limes, cut in half or wedges
2 avocados
Tortilla chips

Peach Apple Sauce

Made this because I had a bunch of fruit that needed to be used, nothing special, just awfully easy and tasty :)


Ingredients:
apples and peaches, twice as many apples as peaches (I used ten apples and 5 peaches)
cinnamon
brown sugar (optional)
you need a crockpot!

Coconut Cheesecake

I made this for my dad's birthday, because canned pumpkin wasn't in season. :)  If you have any trouble finding cream of coconut (NOT COCONUT MILK!!!) look in the booze section!!  AND, make sure you STIR the cream of coconut.


Ingredients:
2 packages cream cheese (8 oz. each), softened
1/2 c. cream of coconut  (be sure to stir before adding!!!)
1/2 c. sugar
1/2 tsp. vanilla
2 eggs
1 pie crust
2 c. cool whip
1/2 c. coconut flakes, toasted

Coconut Cream Pound Cake

This recipe is really for a bundt cake pan, but I just split it in halves and made it in two loaf pans



Ingredients:
1 c. softened butter
1 package cream cheese (8 oz.)
3 c. white sugar
6 eggs
1 tsp. coconut extract
3 c. flour
1/2 tsp. baking powder
2 c. coconut flakes

Chicken n' Dumplings

Rebecca was telling me how she looooves dumplings (thanks Kung Fu Panda) and it made me want chicken and dumplings.  :) You could substitute premade biscuits for the dumpling mixture I used, just cut them in halves or quarters.






Ingredients:

  • 2 (10.75 ounce) cans reduced fat cream of chicken soup
  • 2 (14.5 ounce) cans low-fat, low sodium chicken broth
  • 1 c. milk
  • 2 Tbs. vegetable oil
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1 c. chopped carrots
  • 6 skinless, boneless chicken breast halves - cut into bite size pieces
  • 2 tsp. celery seed
  • ground black pepper to taste
  • Dumplings:
    • 2 c. sifted all-purpose flour
    • 1 Tbs. and 1 tsp. baking powder
    • 1 tsp. salt
    • 1 c. milk
    • 1/4 c. vegetable oil

Chili Rub Steak and Pico de Gallo

This steak rub is awesome!  My dad found it a long time ago in a magazine, we use it for rib eyes on the grill.  Also like to top it of with Pico de Gallo, or put the pico on the side like I do :)  It's REALLY important to make the pico the day before you plan to use it!!


Rub Ingredients:
1/4 c. Chili Powder
1/4 c. Paprika
1 Tbs. Garlic Powder
3 Tbs. White Sugar
salt and pepper to taste

Instructions:
Mix all together in a cake pan, place steaks in rub and coat both sides.  Let sit overnight in the refrigerator if desired, tastes good even if you don't!


Pico ingredients:
2 jalapenos
2 large tomatoes
1 onion
2 cloves of garlic
cilantro to taste
lime juice to taste

Instructions:
Seed jalapenos, chop all ingredients and mix in medium or large bowl, add lime juice.  Let refrigerate over night, VERY IMPORTANT!!

Southwest Steak Stew

Forgot to take a pic of this one, will add a pic next time I make it.  But it's awesome!!  It's sounds similar to my chili but trust me, it's not!  Especially if you use steak like the recipe calls for.


Ingredients:
1 lb. sliced steak (can also use 2 lb. ground beef)
1 1/2 cups diced onion
1 (28 ounce) can whole peeled tomatoes, chopped, juice reserved
1 (15 ounce) can pinto beans, rinsed and drained
1 (16 ounce) can whole kernel corn, drained
1 cup picante sauce
3/4 cup water
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
salt to taste
Shredded Cheddar cheese

Chocolate Chip Cookies

Josh made these chocolate chip cookies last night because well... I wanted cookies. haha, they look a little funny, my theory is we overmixed. so dont overmix!  the dough should be thick, if its a little runny, throw it in the fridge for a bit. it helps! p.s. I know the measurements are a little odd, it's because the recipe is converted from a recipe that makes 8 dozen cookies... I don't think ANY of us need that many chocolate chip cookies. lol


Ingredients:
3/4 c. margarine, softened
1/2 c. + 2 Tbs white sugar
1/2 c. + 2 Tbs packed brown sugar
1/2 tsp. vanilla extract
1 egg
2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 c. semisweet chocolate chips

Kayla's Chili (Yes, the one that everyone asks for!)

So, I made this for a potluck at work, and EVERYONE asked for a recipe. I never got around to giving it but every time I take this anywhere it's gone in minutes! It's easy to adjust to your own taste, and very very very (did I say VERY?) easy to make! And cheap to boot. :D  There are a lot of comments at the end of this recipe because this is totally my own, there are a lot of changes that can be made, and so many different variations!  Please read them before cooking!  I serve this with sweet corn bread. (Our favorite is Marie's Callendar's.)


Ingredients:
2 lbs. ground beef 
1 14.5oz can stewed tomatoes
1 can of each pinto, red kidney, white(navy?), and black beans
half of a large yellow onion, chopped (1 1/2 c.?  I've never measured!)
1 can of sweet corn
1/2 c. green bell pepper, chopped
1/2 c. red bell pepper, chopped
1/2 tsp. cayenne pepper (more or less to taste, this is the spicy-ness!)
1 tsp. white sugar
1 tsp. dried oregano
1 tsp. ground cumin
1/4 c. chili powder
salt and pepper to taste (usually about 1 tsp.)
